July - Nutrition Transformation - To keep this Triathlete strong


Nutrition Transformation

I train hard and I watch what I eat but for whatever reason I still struggled with my weight throughout these past years - and I know I am not alone.  Weight really wasn't a true driver just a mere nice to have.  The real driver was the constant fatigue stomach problems (don't want to dish out to much TMI), I was just feeling icky.

The nutrition transformation began the end of June when I went with my mother-in-law to a meal preparation event at Whole Foods - They were preparing salad wraps and that sounded like a yummy treat to me.  I sat down around a table with 9 other women.  I learned very quickly that my mother-in-law and I were the only ones in the room that were not vegan.    As the group were discussing how they eat and what they eat I chimed in and stated I could never survive as a vegan because I am an athlete and I need the protein - I constantly chuckle at that comment because that girl (me) had much to learn.

The meal preparation instructor introduced me to the Engine 2 brand and this guy named Rip, who was a former international triathlete who fueled his training with a plant based diet - Seriously!!!  Okay, I'm listening -  I learned that plant based nutrition is packed with all the nutrients needed to fuel my mind, body, soul - and the driven athlete that I am too!    I went straight to facebook and posed the question - Can you train and eat 100% plant based-healthy vegan?  Yes, yes Korrie you can.

I made the transition from lean protein, carb balanced program to my plant based plan on July 1st, 2013.   I chose this plant based plan for health reasons and health reasons only.  I love bacon and steak and do plan to still indulge from time to time. 

Many of my friends are dying to know what I eat and how I sustain.  Keep in mind this is my first month and I am still learning and growing with this experience!

I weighed in on July 25th and lost 4.29% body fat since starting the program.


Importantly, I have continued to gain muscle mass.   Keep in mind I work full-time, train full-time and manage my busy family full-time.  I don't count calories and yes I prepare my meals ahead - most of the time. 

So here is what I typically eat:

Breakfast
  • Steel Cut Oatmeal
  • Engine 2 Morning Blend - place 1 cup of frozen morning blend in a bowl or coffee mug and heat for 1 minute.  Eat and enjoy
This is my favorite fuel before any training session anytime of day!
Engine 2 Morning Blend

Lunch
  • Rice and Vegetables - I simply through a bag of Engine 2 frozen rice blend with vegetables I have available in the kitchen sometimes I will add some black beans as well.  I typically will season with one or two of the following - cayenne, turmeric, curry, cumin, basil, or balsamic vinaigrette or a no oil dressing.  Just depends what my taste buds are calling for.

  • Tortilla Wrap filled with your favorite vegetables and hummus.  I spread the hummus on the tortilla and then load it with vegetables.   My favorite tortilla is Engine 2 sprouted ancient grains.  I heat it in the microwave for about 15 seconds before I spread the hummus and load the vegetables.  It softens the tortilla enough so you can actually wrap it without it cracking and falling apart.
  • BLT Wrap - Coconut bacon, lettuce, and tomato with avocado vinaigrette dressing

Snacks
  • Hummus and vegetables (love raw zucchini, bell peppers, cucumbers, celery, carrots etc)
  • Peanut butter and vegetables - same as above list above
  • Rice Chex cereal and vanilla soy milk
  • Fruit (seasonal - right now I am eating lots of cherries and plums)
  • Engine 2 crispbread and hummus
  • Beanitos and Hummus

Dinner
  • Sweet Potato, onion, and tempeh (the only processed product I eat).
  • Rice and Vegetables - same as lunch mix
  • Vegan Lasagna - not a go to but fun to change it up.  I typically cut it up into squares and put it into individual plastic zip-lock bags and place into the freezer.  Then I just grab and go.
  • Green Salad with black beans, vegetables I have around, avocado and hot sauce...sometimes I sprinkle with my coconut bacon.
  • Gluten free pasta with black beans and vegan pasta sauce

Dessert
  • Fruit
  • Soy Delicious Purely Decadent This vegan ice cream is organic, free of refined sugars, lower in fat than traditional ice cream, and comes in a variety of flavors from the popular Chocolate Peanut Butter Zig Zag to the classic flavors of Mint Chip and Rocky Road.
  •  Strawberry sorbet - homemade

May - Triathlon Gear

With training in full swing there are a few things that I would like to add my triathlon gear.  Some are just mere replacements but I do have a few must have's for this season that I've never had before.  I would be curious to know what is working for you.....



First item on the list is a replacement but also an upgrade -  

Waterproof Ipod!
I had the little waterproof box that you placed your ipod in but the headphones that were attached shorted out quickly.  I blame the chlorine even though I rinsed it at every use.  Sometimes music is a great motivation when you don't exactly feel like getting in the water.

Tri Cycling Shoes
Okay so this is probably more embarrassing for me than anything but I have owned one pair of cycling shoes which I have only used in cycling classes and I only used them a couple times (They didn't fit right).  Over the past 6 years I have done over a dozen races and trained to my hearts content and I have done that in a good old pair of sneakers.  Time to up my game and get into a good pair of triathlon cycling shoes.  I've done a bit of research and I have narrowed it down to three choices.

Louis Garneau TRI X-speed - There are not a lot of reviews on this shoe and the ones I was able to find just stated they were a great cycle shoe.  I have read that they have a larger toe box
Price: $95 - $120
Specialized Trivent - Reviews share that they have great ventilation....Maybe too much ventilation from the looks of it.  It looks like it would be easy to get on and off as well.  Downside is they run a bit narrow.  I will try on the men's as well if the women's fit too narrow.
Price: $100

  
Shimano TR-31 - There are very few reviews on this one but the toe box is suppose to be wider which is what I need.  The men's version has great reviews so I figure it is worth trying it on.

Trisuits
One piece or two piece?.....that is the question

I have raced in a one piece but is has worn out and I am also stepping up the mileage from a sprint to an Olympic distance so fit and comfort are extremely important.  The draw back I found with the one piece is that I always have to pee but taking the one piece off during a race really feels like it impacts my time.  You are fatigued and trying to pull off a wet, tight fitting suit is exhausting.   The draw back of a two piece is that most shorts ride up so I am constantly pulling them down.  The top is usually snug as well causing it too roll up as you ride/run.  So I have to wonder if there is even such a two piece suit out there?  Of course I have done a bit of research and it looks like SOAS racing is specifically for women (double points I'd say).  The top wider at the bottom to avoid the roll up.  I would really like to find out who carry's these so I can try out the fit.

Running Shoes

So this is probably the most difficult to find the best fit.  I have in the past suffered from plantar fasciitis with my right foot, I have a bunnon on my left foot.  I feet are not narrow but also are not wide.

There are a ton of reviews about every different kind of specialized triathlon running shoe that it I have finally decided I just need to go try a few on and see how they feel.

The first shoe on the list is the Pearl iZUMi Women's Iso - I really am not a fan of the colors but the overall reviews suggest that it may be a good fit even for someone who may have problem feet.

Price: $90 - $120
Color Options - Not a fan

The second shoe is Brooks t7 racer - The color is perfect but I'm not sure if the toe box will be large enough.  The overall reviews suggest that this also may be a good option.  Chrissie Wellington wore these so we will see!  :o)  Oh, and I love to price point.

April Reflection

It has been quite a few months since my last posting.  I was reminded twice in one day to get this updated.  So here it is - What has this Triathlete been up to since December.

Well the beginning of January I participated in a one day tri-clinic.  It was so much fun.  Shout out to Athletes Lounge for putting together such a great event.  I am pretty certain swim starts won't be nearly as scary as they have been in the past.  Being squished between to burly guys swimming across the pool surely cured me!!!

Getting some coaching advice


Late January Eli became really sick.  It was pretty scary and we learned that his immune system was very weak and he wasn't building up the antibodies he needed to fight even the simplest of infections.

Since late January my priorities shifted to Eli and training fell by the way side; wow! that is such an understatement.  To put it into perspective, from January 14 - March 4 Eli saw a Doctor (Primary, Specialist, etc) a total of 21 times.  Crazy times....but all of that is behind us now.

April will be our fresh start to the New Year and Eli is doing great.  Eli is still going through a gamut of test so the hubby and I are taking turns getting our workouts in and I'm trying to fit it what I can at lunch time.  Not nearly enough training to prepare for triathlon season but I will fit in what I can.

On April 14th Ironman announces the 100 lottery slots for Kona.  Anxiously awaiting the results.  This may change my training program/priorities should I be so lucky as to be picked for one of those slots.
